The fertile Po valley plan and the gentle Berici hills, all surrounded by mountains, starting from one of the most famous highlands of Italy, the Asiago Plateau. It's natural that such a varied landscape like the one that characterizes the Province of Vicenza, would express itself in the most diverse tastes, flavors and odors that have fully established themselves in the renowned Italian culinary tradition. It all starts from one sector, the Vicenza agro-alimentary sector, which is well-structured and deeply rooted in the territory. A sector that is appreciated for a considerable number of products: certainly the traditional and typical local products, but not only, because Vicenza's agro-alimentary sector is able to express itself in the entire range of the Italian food tradition, from pasta to sweets. Certainly, there are products that represent the feather in Vicenza's cap. And it is also the case with several specialties that have been granted European recognition in the form of a PDO (Protected Designation of Origin) such as Soprèssa Vicentina and Formaggio Asiago, or a PGI (Protected Geographical Indication) like Marostica cherries. But an honorable mention also goes to the products certified by the Consortium “Le Terre del Palladio”, which includes cheeses like Stravecchio di Malga and Morlacco, which are worthy of mention; cereals like Vialone Nano rice, Marano cornmeal; and vegetables like the Mountain Potato and Radicchio. And, finally, how could one forget Bassano white asparagus, rwhose cultivation in the Bassano area has ancient roots, a true protagonist of springtime gastronomy in a wide variety of dishes, or the one that represents the typical local dish par excellence: “Baccalà alla Vicentina”. A recipe based on stockfish (Veneto imports 80% of the stockfish produced in Norway) that can be enjoyed in every restaurant in the province, with particular attention to the traditional recipe for those identified by the logo “I Ristoranti del Baccalà”. So, Vicenza comes to the table rich and appetizing, capable of satisfying the most demanding palates with quality products. The wines, for example, with the DOCs (Controlled Designation of Origin) Breganze, Colli Berici, Gambellara, Lessini Durello, Arcole and Vicenza. The olive oil with the two PDOs, “Veneto Euganei e Berici” and “Veneto del Grappa”. The sausages where, in addition to the abovementioned Soprèssa Vicentina, there is also Prosciutto Veneto Berico - Euganeo PDO. Without forgetting several successful niches such as that of grappa and the distillates. So, the Vicenza area has proven to be a fertile context where hundreds and hundreds of businesses have sprung up oriented to serving the internal market but also capable of conquering foreign consumers, who find all the flavor of the great Italian tradition in its local agroalimentary products.
